Cheddaring Cheese - one of the last steps in making our cheddar cheese. This is the yellow cheddar we use on our cheeseburgers, salads, grilled cheese & omelets on our menus. This step is usually at about the 8th hour of a 9 hour process! Basically - it's making fresh cheddar cheese curds that we then put in 20 pound blocks to age - for 6 months to a year before we use it in the kitchens. | Young's Jersey Dairy
